Mix the pork with 2T apple cider vinegar and 1T tuna fish sauce for the first marinade.
Blend half the onion in a blender and cut the other half into large chunks.
In a bowl, mix blended onion, 1T minced garlic, 3T soy sauce, 2T mirin, 2T starch syrup, 0.5T ginger powder, 0.5T ground pepper, and 2 sesame sauce packets to make the marinade.
Add the pre-marinated pork to the sauce and marinate for 30 minutes.
Stir-fry the marinated pork in a pan on low heat. Once a lot of moisture is released, increase to high heat and cook until moisture evaporates. Add the large-cut onion, 1T soy sauce, and green onion julienne to finish.
