Remove the base of the enoki mushrooms and rinse lightly in cold water.
Mince the green onion. Deseed the cheongyang chili peppers and mince them.
In a bowl, mix 1T gochujang, 3T gochugaru, 1T dark soy sauce, 1T starch syrup, 0.5T chicken stock, 0.5T sugar, 4T water, 1T minced garlic, and black pepper to make the sauce.
Heat 3T of olive oil in a pan and lightly sauté the minced green onion and chili peppers.
Arrange the enoki mushrooms neatly in the pan and cook over medium heat, flipping both sides until golden.
Pour the sauce over the mushrooms, cover with a lid, and simmer on low heat for 5 minutes.
Optionally, boil udon noodles, rinse in cold water, and stir-fry with the remaining sauce in the pan.
