Lightly rinse the dried squid in cold water and cut into bite-sized pieces.
Squeeze out the water, add 2T mirin, cover with plastic wrap, and microwave for 1 minute. Leave covered.
Slice the cheongyang chili peppers into rounds, slice the garlic cloves thinly, and finely chop the onion.
In a bowl, mix together 2T gochujang, 2T plum extract, 3T oligosaccharide syrup, 1T dark soy sauce, and 3T water to make the sauce.
Heat 2T cooking oil in a pan and stir-fry the chili peppers, garlic, and onion until lightly golden.
Add the sauce and when it starts to bubble, turn off the heat.
Remove the plastic wrap from the dried squid, add to the pan, and mix well. Drizzle with 1T sesame oil and sprinkle sesame seeds to finish.
