Soak the pork shoulder in water for 10 minutes to drain the blood.
In a pot, add water 1.2L, doenjang 1T, dark soy sauce 2T, bay leaves 4 pieces, Vietnamese chili peppers 5 pieces, instant coffee mix 1 packet, and ssanghwatang 1 bottle, and bring to a boil.
Once boiling vigorously, add the pork shoulder and soju half cup, boil uncovered for 5 minutes, then cover and reduce to medium heat and simmer for 40 minutes.
Turn off the heat and let it rest covered for 10 minutes.
