Place beef short ribs in a bowl, add 2T sugar, 2T mirin, and enough water to submerge. Soak for 30 minutes to remove the blood, then rinse clean.
Blend half a pear, 1 onion, and 100ml water in a blender.
In a pot, combine the short ribs, blended mixture, 1.2L water, 2T sugar, 3T corn syrup, 3T mirin, 1T minced garlic, 1T black pepper, 90ml soju, and 180ml dark soy sauce. Once boiling, skim off foam and impurities after 10 minutes.
Cover with a lid and simmer on low heat for 30 minutes.
Prepare 2 potatoes, carrot, shiitake mushrooms, and green onion.
Add all prepared vegetables, cover and cook for another 30 minutes, then uncover and reduce the sauce to your liking.
Add 1T sesame oil at the end.
