Soak glass noodles in cold water for 1 hour; julienne fish cake, slice shiitake mushrooms, cut chives into 5-7cm lengths, and shred carrot with a peeler.
Blanch julienned fish cake in hot water for 10 seconds, then drain in a colander.
Heat 4T cooking oil in a pan, stir-fry fish cake, add 2T brewed soy sauce and stir-fry lightly.
Add onion, carrot, and shiitake mushrooms and stir-fry for 2 minutes.
In a pot, add 1L water, 3T cooking oil, 10T brewed soy sauce, 4T dark brown sugar; bring to a boil, add soaked glass noodles and cook.
When the noodle broth has nearly reduced, add stir-fried fish cake, vegetables, and chives, drizzle 1T sesame oil and mix.
