Prepare the zucchini, king oyster mushrooms, and red chili pepper.
Place the zucchini and mushrooms in a bowl, add enough water to submerge, add 2T pickling salt, and let sit for 10 minutes.
In a bowl, add 0.5T salt and 4 eggs and beat well.
Drain the salted zucchini and mushrooms through a strainer, then pat dry with paper towels.
Put the pancake mix in a plastic bag, add the zucchini and mushrooms, and shake to coat evenly.
Dip in the egg wash and pan-fry slowly over low heat in an oiled pan.
