Rinse the aged kimchi several times.
Dissolve 4T sugar in 800ml water in a bowl, add the kimchi, and soak for 30 minutes.
Remove the kimchi, rinse once more, and squeeze out the excess water.
Prepare the onion and dried anchovies.
Layer the onion, anchovies, and kimchi in a pot in that order. Add enough water to submerge, then add 1T doenjang, 1T minced garlic, 2T mirin, 1T sugar, and 2T perilla oil. Bring to a boil.
Once boiling, cover with a lid, reduce to medium-low heat, and simmer for 15 minutes. Flip the kimchi and simmer for another 15 minutes until fully cooked.
