Soak 250g glass noodles in cold water for 1 hour.
Marinate the pork with 2T brewed soy sauce and 1T mirim.
Prepare and slice the onion, carrot, and chives.
Heat 2T cooking oil in a pan, stir-fry the pork, and when nearly cooked, add the onion and carrot. Stir-fry together and transfer to a plate.
In a pot, combine 300ml water, 6T dark soy sauce, 2T mirim, 2T sugar, 2T cooking oil, and the soaked glass noodles. Stir-fry for about 4 minutes until almost no liquid remains.
Add the stir-fried pork, vegetables, and chives to the noodles, drizzle with 2T sesame oil, and toss everything together evenly.
