Wash the mung bean sprouts thoroughly
Julienne the carrot finely and cut the garlic chives to match the length of the carrot
Bring 1L water and 1T coarse salt to a boil in a pot, then add the sprouts and blanch for 2 minutes 30 seconds
Add the garlic chives and carrot and blanch for another 20 seconds
Transfer the blanched sprouts to a strainer and rinse quickly under cold water
Squeeze out the water thoroughly, then toss with 2T tuna fish sauce, 1T seasoned salt, and 1T sesame oil
