Trim the garlic scapes and cut into bite-sized pieces.
Put dried shrimp in a dry pan and toast for 2 minutes.
Strain through a sieve and shake off crumbs.
Heat cooking oil 2T in the pan and stir-fry the garlic scapes for 2–3 minutes.
Add the toasted shrimp, brewed soy sauce 2T, oligosaccharide syrup 2T, sugar 0.5T, and minced garlic 0.5T and stir-fry.
Add sesame seeds and sesame oil 1T and toss in the residual heat.
