Prepare and clean the vegetables
In a bowl, add the prepared mixed mushrooms and season with 2T brewed soy sauce, 0.5T sugar, and a sprinkle of black pepper
Heat 2T cooking oil in a pan, add the onion, carrot, and a pinch of salt, and stir-fry until the onion becomes translucent
Remove the onion and carrot to a plate, then quickly stir-fry the pre-seasoned mushrooms in the same pan
Put the glass noodles and 1.5L water together in a pot, boil for 4 minutes from the boiling point, then rinse in cold water
In a pot, add 1T cooking oil, 4T brewed soy sauce, 2T mirin, and 1T dark brown sugar; when boiling, add the cooked noodles and stir-fry for 2 minutes
Turn off the heat, add the stir-fried vegetables and mushrooms (with moisture drained), drizzle 1T sesame oil, and mix everything together well
