Soak the glass noodles in cold water for 1 hour.
Season the pork with dark soy sauce 2T and mirin 1T.
Prepare the onion, chives, and carrot.
Heat cooking oil in a pan, stir-fry the pork until nearly done, then add onion, carrot, and 2 pinches of fine salt. Stir-fry together and set aside.
In a pot, add water 500ml, dark soy sauce 6T, mirin 2T, sugar 2T, cooking oil 2T, and the soaked glass noodles. Cook until almost all liquid is absorbed.
Add sesame oil 2T to coat the noodles, then mix in the stir-fried pork and vegetables and combine evenly.
