Cut the onion and green onion into large pieces.
In a bowl, combine 4T dark soy sauce, 3T plum extract, 2T mirin, 1T sugar, 1T minced garlic, 1T sesame oil, and black pepper to make the sauce.
Pan-fry the pork belly until golden brown, then cut into bite-sized pieces.
Remove the pork belly and wipe away excess oil from the pan with a paper towel.
Return the pork belly to the pan along with the onion, green onion, and sauce, then stir-fry continuously for 3–4 minutes.
Once fully cooked, sprinkle sesame seeds on top.
