Steps

  1. Mix salt, black pepper, brown sugar, and paprika in equal parts to make a dry rub, or use a store-bought rub

  2. Coat the pork shoulder or neck thoroughly with the rub and refrigerate (doing it the night before is convenient)

  3. Brush the marinated meat with honey and apply liquid smoke at about 1 tablespoon per 1kg

  4. Wrap tightly in aluminum foil

  5. Roast in the oven at 120°C for at least 3 hours

  6. Remove the foil, raise the heat to 230°C, and roast for 15 minutes to crisp the surface

  7. Pull the meat apart using a fork or your hands

  8. Load the pulled pork into a burger bun and serve with BBQ sauce and coleslaw
