Place 300g of pork belly in a pan, season with salt and pepper, then grill until golden brown on both sides and set aside.
In the same pan with the remaining oil, add a handful of whole garlic and 1/4 thinly sliced onion, and grill until golden brown.
Add 3 tablespoons of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of red pepper powder, then stir-fry lightly, being careful not to burn the sauce.
Add the previously grilled pork belly back into the pan and stir-fry everything together with the sauce.
Serve the stir-fried onion, garlic, and pork belly sequentially over warm rice, then lightly torch to add a smoky flavor for a delicious finish.
