Cut 400g of salmon into bite-sized pieces, then season with salt and pepper.
In a preheated pan, quickly sear the salmon until golden brown on the outside. Remove from the pan and set aside. It's best to cook it for only about 2 minutes to prevent overcooking.
In the same pan used for the salmon, melt a piece of butter. Add minced onion (or shallot) and 7 cloves of minced garlic, then sauté over medium heat until fragrant.
Add 1 cup (200g) of orzo pasta and sauté for about 3 minutes until it's coated in butter and slightly golden, then reduce the heat to low.
Pour in 2 cups (400ml) of water, cover with a lid, and cook for about 3 minutes to cook the orzo.
Uncover the pan and stir well to prevent sticking. Add 2 tablespoons of cream cheese, 1 tablespoon of tomato paste, and 1 tablespoon of chicken stock, then mix thoroughly. If the consistency is too thick, you can add a little more water or fresh cream to adjust.
Add half a bunch of spinach and sauté until wilted. Then, return the pre-cooked salmon to the pan, cover, and let it warm through.
Serve the finished pasta on a plate, drizzle with olive oil, and generously squeeze the juice from 1 lemon for a delicious Cream Cheese Salmon Pasta.
